My name is Francesca Falbo Sahonta, I was born in Italy near Florence, and moved to UK 18 years ago. I have always cooked and baked from an early age, inspired by the amazing talents in my family. A few years ago, I left a customer service job to pursue my dream of running my own business and baking full time.
My interest is not just baking per se, but patisserie and cake art in particular. Predominately, I am proud to day that I am self-taught. Using resources such as books, online courses, social media and YouTube videos. However there has been odd formal modelling and cake sculpting course along the way.
The business started with a particular focus on creating perfectly sculpted Macarons. Something which took me 6 months to perfect and for which I started to develop a name for (“the macaron lady”). After about a year I started making cakes and that is what I enjoy the most. I always aim to be original and get a great deal of enjoyment trying out different techniques. Currently I supply patisserie for 5* hotels in the North West region, developing new deserts and concepts for them. However my great passion is cake art, which lead to me supplying innovative wedding and celebration cakes. Recently this has taken shape in the form of mirror glaze and velvet cakes. Something for which I seemed to have developed a particular forte for. I find them mesmerising, beautiful to look at and ultimately delicious. There are endless designs and different techniques that can be used. This is what it makes them challenging, and never a bore to bake. Chocolate flowers is another art form that I am perfecting and at the time of writing, it’s all about chocolate artistic sculpture for me. Finally my other passion are buttercream cakes. Using various natural ways to decorate them, such as macarons, fruits, meringues and fresh flowers.
I hope you enjoy my blog. The aim is not only to showcase my work, but also to inspire others to follow their passions and dreams. To show that it does not always take a great deal of cost, formal training and qualifications. But rather being resourceful and above all determined.
